Mix fenugreek leaves, gram flour, ajwain, salt, and oil to form muthiya dumplings, shape into small balls, and deep-fry until golden.
Combine grated coconut, sesame seeds, chopped green chili, ginger paste, turmeric, and salt to prepare the spice stuffing.
Slit eggplants, potatoes, sweet potato, and raw banana, then stuff them with the prepared spice mixture.
Heat oil in a heavy-bottomed pot, add ajwain, and layer the stuffed root vegetables first.
