Blanch spinach leaves in boiling water for 2 minutes, shock in ice water, and blend into a fine puree.

Melt butter in a pan, sauté finely chopped onion, ginger paste, and garlic paste until golden brown.

Add chopped tomato, turmeric powder, and salt; cook until tomato turns mushy.

Add cubed chicken breast and sear on medium-high heat for 6 minutes.

Pour in spinach puree and water, cover, and simmer for 12 minutes until chicken is tender; finish with cream and garam masala.
