Soak chickpeas overnight and pressure cook with tea bag and salt until soft.
Knead all-purpose flour, yogurt, baking soda, salt, and water into a smooth dough; rest for 2 hours.
Heat 2 tbsp oil, temper cumin seeds, sauté chopped onions, ginger paste, garlic paste, and tomatoes until thick.
Add red chili powder, garam masala, and boiled chickpeas along with cooking water, simmering for 15 minutes.
Roll small dough portions into disks and deep-fry in high heat oil until fully puffed and golden brown.
Serve hot bhature with the dark spicy chickpea curry.
