Roast whole eggplant over an open flame until skin is completely charred and inner flesh turns soft.

Peel charred skin, discard stem, and mash flesh thoroughly.

Heat mustard oil in a skillet, sauté garlic paste, chopped onion, and green chilies until soft.

Step 4 of 5

Add chopped tomato and salt; cook for 4 minutes until tomato softens.

Step 5 of 5

Stir in mashed eggplant, cook for 5 minutes, garnish with coriander leaves, and serve warm.
